These Keto Kabobs Pack A Healthy Punch

You don't need to eat bland food just because you are eating healthy. As featured in Men's Journal magazine, these Spicy Cashew Pork Kabobs are loaded with flavor to ignite your taste buds as well as your metabolism.

Spicy Cashew Pork Kabobs

Makes 5-6 Servings

Ingredients

  •  1/4 cup red-wine vinegar

  • 3 tbsp coconut milk

  • 2 tbsp coconut oil

  • 11/2 tsp sesame oil

  • Juice of 1 lime

  • 2 tbsp natural cashew butter

  • 1/2 tsp red-pepper flakes

  • 1 tbsp ginger, minced

  • 2 tsp garlic, minced

  • 1 tsp black sesame seeds

  • 1 tbsp fresh cilantro, roughly chopped

  • Zest of 1 lime

  • 11/2 lb pork loin, cut into 1-inch cubes

Directions

1) Combine first six ingredients in a bowl and whisk. When smooth, add remaining ingredients, except pork.

2) Add pork to mixture and turn until coated. Cover the bowl and refrigerate 6 to 8 hours. Take pork out and drain thoroughly. Thread pork onto metal skewers. Let sit 20 minutes while you preheat grill to medium-high.

3) Spray grill, then place kebabs on it. Turn often. Grill 15 minutes or until pork is cooked through.
